It seems that you guys liked my post about the Zucchini Fries. I often try to prepare new foods, so I wanted to share my Spinach Smoothie recipe. It’s green, delicious and nutritious! Don’t be afraid to try it.
Ingredients: You Need a Blender
A Handful of Fresh Spinach Leaves
6 oz Yogurt OR a Cup of Vanilla Almond Milk
Banana (Optional)
Blueberries (Optional)
Strawberries (Optional)
100% Maple Syrup (Optional Sweetener)
and Ice

First, Blend the Spinach with the milk. This will prevent chunks of leaves in your smoothie. Then add ice and any remaining ingredients until smooth and creamy.
Some people say “you can’t taste the spinach.” That’s not totally true, it has a very mild flavor that’s easily over-powered by the fruit flavors. I found this smoothie to be refreshing and filling.
You can also add strawberries, but I heard it turns it brown. I liked the vibrant green color, so I stuck the strawberry on the side. This smoothie is quick and easy, and can be tweaked so many ways. If you use frozen fruit, then you don’t need the ice cubes.
In the smoothie pictured, I used spinach, vanilla almond milk and ice, garnished with a fresh strawberry. I did not use the syrup or yogurt because the Vanilla almond milk is very sweet.

I had such a fun weekend! On Friday night I went to a get-together, not really a party. We had my favorite frozen cocktail “Pink Panties“ I’ll give you the recipe under 2 conditions….1) You acknowledge that this delicious adult beverage is not in any way shape or form healthy, low fat or wholesome and 2) you don’t tell anybody you heard about it from me…. Now that we have that understanding, First, you fill the blender about 80% full with ice, then add 1 can of frozen pink lemonade, then fill the same can with vodka and pour into the blender. Then blend, pour and enjoy!…After indulging in a few pink panties, I didn’t roll out of bed until 11 AM on Saturday, just enough time to shower and make it Girls Spa Day and happy hour. All 7 of us ladies met at the nail spa. I had a pedicure last week, so I just got fill-in on my nails and my eyebrows waxed. The nail tech was such a flirt, he said “I know you, where have I seen you before?” I replied “I’m not sure, this is my first time here.” To which he replied, ”Oh I remember, I’ve seen you in my dreams!” LOL! He was working hard for his tip. I got a pretty gold color on my nails, but I felt so Plain Jane and boring. All of my friends, got orange, lime green, hot pink and even yellow. I don’t think that I could ever be that daring and bold. After the nail spa, we went to a local restaurant bar & grill. I really didn’t need anymore alcohol, but it was girl’s day, so I had a Berry flavored Cosmo. After that I was done. That was more than enough drinking and empty calories for one weekend. We had so much fun! Even though it’s girls day, you know all we did was talk about men. You can’t live with them, and can’t live without them…. After happy hour, I went shopping with my shopping cousin. I did really good, I only bought a white fedora hat that I plan on wearing during my cruise to the Bahamas next month. I was supposed to go with her and watch the Mosley v. Mayweather fight, but I was too tired. I did more than enough for one day. When I woke up this morning, I thought wow, I can’t really blog about drinking, partying and shopping. So, I decided to get up and go work out. I took Nyah to the park and we walked and jogged for about an hour. I’m hoping that things will at least balance out on the scale tomorrow. But if not, at least I already know that I got back on the healthy eating track. For breakfast I had a toasted VitaTop muffin top. It was surprisingly good, and only 1 weight watcher point (100 cal, 2 fat and 5 fiber). I hope your weekend was just as fun, and little more healthy than mine.


I had a Terrible morning! It was hard to get out of bed, and once I finally did, I was running late. I mixed up a protein shake, and put it in the freezer. If I don’t blend it in the smoothie maker
(I love that thing b/c it doesn’t leave ice chunks like a regular blender); then I usually put it in the freezer when I get up so that it’s nice and slushy when it’s time to leave for work. My pants were a little wrinkled, so I ran the iron over them. I took my shower. Then I had to layer up with tights, socks, and t-shirt under my dress shirt. I was in such a hurry, that on my way out I snatched open the freezer door to get my shake. It went EVERYWHERE! It was almost as if somebody inside the fridge threw it at me. It was all over the freezer, all over the fridge door, dripping down the magnets, sprayed across the entire kitchen floor, all the way over to the sink. My shirt and pants were soaked. It was even on my boots! How in the world could 10 ounces of slushy shake go so far? I was so upset, but even madder at myself for pulling open the door so fast. I had to find another outfit, and clean up the kitchen, and I was already late. I tried to calm myself down on the drive to work. When I walked into work 20 minutes late, the partner, my boss, was right there. Uggh this day wasn’t getting any better. I gave a forced friendly smile, when on the inside, I was really panicking. It’s definitely not a good look for the new kid on the block to be 20 minutes late. Then later I hit my foot one of the other attorney’s desk; man that hurt. I said this day has to get better, I kept telling myself positive things. I turned in an assignment 2 days early to the partner, so hopefully, that gave me some cool points with him. Anyway, after my pretty crappy day, I knew I still had to go running. Something about the “sag wagon” that picks you up if you don’t finish the half-marathon makes me nervous. I went to the gym and hit the track. I put on Day 2 of my week 2 podcast. All was good until this guy and this lady came up the track smelling like fish and cheap cologne. It was awful. I kept thinking my bum knee is hurting; my stupid foot that I bumped on the desk is hurting, and now I have to inhale their funk???? I couldn’t win for losing today. But, despite it all, I ran all of the 90 second intervals and made it home before the 4-8 inches of snow began to fall.
Today Was A Good Day
. First of all there was no rain, that’s enough for a good day. But I cooled off the morning with a homemade smoothie, made out of Orange Juice, Low-Fat Strawberry Yogurt, Fresh Strawberries and oatmeal. At lunch me and the co-worker friend walked a brisk mile, and ate turkey sandwiches on whole wheat bread with fruit and yogurt. Delicious! And I cooked dinner last night for today. Chicken Macaroni and Cheese…the healthier version. An old friend said it tasted good enough to marry me and move in tomorrow….um….not likely…..here’s the recipe!
- 3 Chicken Breast,
- A Box of Whole Wheat Pasta,
- 1 Box of Low Fat Cream Cheese,
- 1 Box of 2 % Milk Velveeta,
- 1 Can of Cream of Chicken Soup 98% Fat Free ,
- 1 Can of Low Soduim Chicken Broth,
- 1 Pack of Lipton Onion Soup Mix.
- Bake Chicken Breast in 9 X 13 size pan, Boil Noodles, In a separate pot melt all other ingredents together. Mix chicken, noodles, and cheese sauce mixture, pour into the same 9 x13 baking pan. Bake at 350 degrees, as my Granny says, “Until it’s Done.” LOL! Enjoy
This was a phrase I took way to literally as I celebrated and indulged at my Niece’s 1st B-Day on Saturday, and Memorial Day Dinner on Sunday AND again Monday. However, this morning when I got on the scale, I was quickly snapped back into reality. The reality where cake everyday for 3 days and overlooked workouts does not help me fit into my skinny jeans. I started off the morning with a strawberry protein shake, nonetheless a half of a donut managed to sneak in. At lunch, I initiated the mile long power walk with the co-worker friend, and the salads that followed. I finished the day with a 3 mile jog, in 55 minutes, and a healthy dinner of grilled tilapia and stir-fry veggies.

Boy Did she enjoy it!
