Today Was A Good Day
. First of all there was no rain, that’s enough for a good day. But I cooled off the morning with a homemade smoothie, made out of Orange Juice, Low-Fat Strawberry Yogurt, Fresh Strawberries and oatmeal. At lunch me and the co-worker friend walked a brisk mile, and ate turkey sandwiches on whole wheat bread with fruit and yogurt. Delicious! And I cooked dinner last night for today. Chicken Macaroni and Cheese…the healthier version. An old friend said it tasted good enough to marry me and move in tomorrow….um….not likely…..here’s the recipe!
- 3 Chicken Breast,
- A Box of Whole Wheat Pasta,
- 1 Box of Low Fat Cream Cheese,
- 1 Box of 2 % Milk Velveeta,
- 1 Can of Cream of Chicken Soup 98% Fat Free ,
- 1 Can of Low Soduim Chicken Broth,
- 1 Pack of Lipton Onion Soup Mix.
- Bake Chicken Breast in 9 X 13 size pan, Boil Noodles, In a separate pot melt all other ingredents together. Mix chicken, noodles, and cheese sauce mixture, pour into the same 9 x13 baking pan. Bake at 350 degrees, as my Granny says, “Until it’s Done.” LOL! Enjoy
This was a phrase I took way to literally as I celebrated and indulged at my Niece’s 1st B-Day on Saturday, and Memorial Day Dinner on Sunday AND again Monday. However, this morning when I got on the scale, I was quickly snapped back into reality. The reality where cake everyday for 3 days and overlooked workouts does not help me fit into my skinny jeans. I started off the morning with a strawberry protein shake, nonetheless a half of a donut managed to sneak in. At lunch, I initiated the mile long power walk with the co-worker friend, and the salads that followed. I finished the day with a 3 mile jog, in 55 minutes, and a healthy dinner of grilled tilapia and stir-fry veggies.

To Forgive is Divine…today started off great with an orange juice and real strawberry smoothie for breakfast, but when I got to work; I still wanted “breakfast.” I went and got a pancake and an egg. Then for lunch I had a huge nacho supreme. Who knows how many calories were in that. I felt so bad; I knew I had to work out. The whole first 5 minutes of my walk, I beat up myself about my poor food choices….then I said you know what, when Kay Quinn asked me about the most important lesson learned, I said “talking back to the negative thoughts,” so that’s just what I did. I told myself no matter what you do; you can’t UN-eat the freaking nachos. Get over it, forgive yourself! So I picked up the pace to my usual jog and finished my 5K (3.1 mile) Run. I finished in a little under an hour. If I wasn’t throwing a pity party in the beginning, I might have beat my official race time…oh well there’s always next time. I made much healthier choices at dinner and had a chicken salad and my fave, a cold glass of Diet Cherry Vanilla Dr. Pepper. Oh, wait, I can’t forget to mention, I left behind the 2 cousins who “had” to watch the American Idol finale…although, even after my 3 mile run, and I still caught the last hour and a half!

Supposedly everyone gets their chance at 15 minutes of fame. My chance was today, but it turned out to be so much more. I interviewed with Kay Quinn of News Channel 5 at the YMCA where I work out. She was so nice! I felt very comfortable, despite the nervous bubble guts I was feeling in the car in the parking lot. Honestly I felt like I was not ready for a “Look at Me Now” weight loss story. I felt like I was still too fat. But I guess other people see it differently, they were all amazed at the before pics and the fat pants I held up in a size 24. Yikes! But today 50 lbs later, as I emailed and texted family and friends to tell them to watch the news, I got so many responses, I never anticipated. I talked to people about their weight struggles, drug addictions, relationship problems, and even how I brightened their day as a whole with my inspirational story. WOW! I guess there really is freedom in truth. AND if that wasn’t enough for one day. Me and the lil sister worked out as usual, we went to Forest Park, and did the workout we did on Saturday, but at a much faster pace. I was feeling the burn as I climbed Art Hill the 2nd lap around. I wanted to sit down like my other sister did on Saturday. LOL! She is so going to kill me….anyway, we power- walked on over to the stairs and Climbed up and back down. It was a great workout to finish up a beautiful day.

So what’s the secret you ask? Sometimes you have to fake it till you make it. For example, today was a beautiful spring Saturday, and I wanted nothing more than to lay in bed. But, I knew I had to go work out. So, I devised a plan. I called my Mom, and called and woke up both sisters and pretended that I was excited about working out, and that they should be excited to join me. I figured at least one would say yes, and then I’d have no excuse. To my surprise, they all agreed to join me, and my little niece too! We had such a wonderful time, we climbed Art Hill a couple times and walked around the fountain while watching couples in love, ride in the pedal boats. It was such a wonderful ambiance. My big little sister said I had better not mention that she sat down in the grass to take a break at the top of the hill…There’s no sitting down during a workout!!! We got re-motivated, and continued onward to climb the stairs in front of the boat house. We raced up the stairs, I lost….Then we played in the fountain. But I must say, that the little sisters out did me today, they WALKED HOME! Me and Mom with the baby, walked back to the car…
